I may be affected by everything-tastes-better-when–you’re-camping syndrome, but I concocted a very tasty recipe the other night. I wanted to make good use of the only cabbage I had seen since leaving Fort William. Some things about the islands may have changed – more houses, better roads -but vegetables remain as elusive as ever. Let’s call in Bosta Bay Chickpea Delight.
Take 1 onion, 1 cup cooked chickpeas, 2 cups shredded cabbage (Savoy if poss), teaspoon each of cumin, coriander, smoked paprika, clove or two of garlic approx. a quarter of a fresh lemon, thinly sliced.
Soften the onion / garlic in some olive oil, cook it all up, eat looking over a white sandy beach with the moon rising. Delicious
